Light Spinach Salad

Serves 4 to 6

Salad Ingredients:
1-9 oz bag Fresh Spinach, cleaned and stemmed
1 c Roasted Salted Sunflower Seeds
1 med Red Onion, thinly sliced
1/2 pound Turkey Bacon, fried and chopped

Dressing:
1c Low Fat or Non Fat Crystal Vanilla Yogurt
1/3 c Whole Grain Mustard
1/4 c Balsamic Vinegar
1/4 c Fat Free Chicken Broth
1/2 c Olive Oil
1 t Salt
1/2 t Pepper

Preparation:
Lightly toss all salad ingredients
Whisk yogurt, mustard, vinegar, chicken broth, salt and pepper
Slowly whisk in olive oil to combine and thicken
Toss dressing with salad ingredients and serve immediately
